The Global Japanese Tea Foundation Course goes far beyond basic introductions, offering an in-depth and immersive exploration of the Japanese tea world. The program traces the rich history of Japanese tea, highlighting the key milestones and influential personalities who shaped its evolution and global presence as we know it today.
Day One focuses on Japanese loose-leaf teas, covering farming practices, terroir, harvesting cycles, shading techniques, leaf composition, and production methods. Participants gain a clear understanding of how each decision in cultivation and processing directly influences aroma, flavor, texture, and quality.
Day Two shifts the focus to matcha, examining its production in contrast to loose-leaf teas, alongside a deep dive into the functional and wellness components found in different Japanese teas. The course explores brewing methodologies—ice brew, cold brew, warm brew, and hot brew—demonstrating how each technique enhances specific tea styles. Service rituals and presentation are also addressed, showing how thoughtful preparation elevates the tea experience to its highest expression.
A defining strength of this course is its hands-on, do-it-yourself approach. Participants actively brew, compare, and evaluate a wide range of teas, closely examining leaf appearance, liquor color, aroma, and taste. This practical immersion builds a strong analytical foundation, enabling participants to confidently assess teas based on harvest timing, shading, processing methods, and overall quality—skills essential for buying, evaluating, and truly appreciating Japanese tea. Across both days, guests enjoy carefully selected artisanal refreshments and the shared experience of learning alongside fellow Japanese tea enthusiasts—an experience that is both enriching and deeply enjoyable.
The course concludes on Day Two with a multiple-choice examination. Successful candidates receive an official certificate issued by the Global Japanese Tea Association, Kyoto, Japan, and are invited to a celebratory graduation ceremony. This special occasion includes Chakabuki, the traditional Japanese blind tea tasting game, guided by a tea master and paired with refined desserts.
An absolute delight and a true stepping stone, this course empowers participants with knowledge that enhances both personal enjoyment and professional growth—whether as a tea sommelier or within the wider beverage and hospitality industry.
